Me and my husband were on a date at Panera the other day (fancy right?) and in my quest to “try something new” I saw their summer salad. I have never been a huge lover of salad with fruit in it but decided to give it a try since it was Panera and I don’t think I’ve ever had anything I don’t like. I got it with a turkey sandwich and after one bite wished I had gotten a full salad instead. This thing was AMAZING! It was fresh, summery, bursting with sweet and tangy flavors and was literally a party in my mouth. The dressing is very subtle and you hardly have to use any to get a nice compliment to all the fruity fun. I inhaled the salad in about 2 minutes flat and instantly wanted more. I came home and realized that I can’t afford Panera every day so I was going to try to re-make my own version at home. Thanks to being able to buy authentic Panera salad dressing at the store it was pretty darn easy. The key to this salad is to buy everything as fresh as you can so that the flavors really come out. They served it with a few very thin slices of chicken but when I don’t have that at home I skip it and just stick with the pecans for protein. Handful of Strawberries, sliced
Handful of blueberries
Handful of mandarin oranges, canned
Handful of pecans
Butter lettuce or greens of your choice
1-2 tbsp of Poppy Seed Salad Dressing by Panera (found at most grocery stores)
Optional – thinly sliced grilled chicken
1) Combine all ingredients in bowl
2) Coat with dressing
3) Toss and serve
*This salad is completely customizable with the quantities you want. Play with it until you get just the right combinations that you like and enjoy!!
