If you are looking for a delicious way to spice up a weeknight dinner this Garlic Lemon Oil Pasta is for you. It’s perfect for a romantic date night at home but versatile enough that even your pickiest of eaters will love it. 3-4 tbsp minced garlic (jarred or fresh will work)
1/2 cup extra virgin olive oil*
6 tablespoons lemon juice (I used fresh to add more flavor)
4 tsp instant chicken bouillon flavor
1/2 tsp ground pepper (freshly ground is best)
1 cup grape or cherry tomatoes*
1lb spaghetti or angel hair pasta
1/2 cup freshly shredded parmesian cheese
1/4 cup feta cheese*
1/4 cup fresh parsley (if in a pinch – dried is suitable)
Cook pasta according to directions
Cook olive oil and garlic in a skillet until golden.
Add lemon juice, bouillon and pepper
Cook and stir until bouillon dissolves
Add tomatoes until cooked to you preference (I like mine soft and simmered in the oil)
In a bowl combine pasta, oil dressing and cheeses and toss until pasta is well coated. Top with parsley and lemon zest.
*Make sure the olive oil is of good quality since the bulk of the flavor will be derived from the oil
*The tomatoes are not a necessity to this recipe as is the feta. These are completely optional and will not deduce from the flavor.
*You can also add veggies to “bulk” up this meal and add more nutrition
*I served this with some black olives
